Ingredients
Cake
- 200 grams dark hazelnut chocolate
- 200 grams soft unsalted butter
- 220 grams sugar
- 10 eggs separated
- 100 grams Self rising flour, if using plain flour add 2 rounded teaspoons of baking powder
- 50 grams dark coco powder
- apricot jam
Icing - Chocolate Ganache
- 360 grams cream
- 360 grams dark chocolate, broken, break into pieces

preheat oven to 180 deg.
Line a 22-5cm tin (9 inch) cal\ke tin with baking paper and spay up the sides of the tin with non-stick spray.
Seperate the eggs, place egg whites into one of your TM bowls.
Place sugar into another TM bowl and blend on speed 10 for 4 seconds. Set aside.
Place chocolate in TM bowl and grind on speed 9 for 7 seconds. Melt chocolate on 50 deg on speed 1 for 4 minutes. Add sugar and butter and beat on speed 7 for 15 seconds or until smooth, with the blades still running add your egg yolks one at a time. Add flour, coco and baking powder, if using. Stir through on speed 4 for 6 seconds.
In your other TM bowl with the egg whites, insert your butterfly attachment and beat on speed 4 on 50 deg for 7 minutes or until light and fluffy.
Fold the whipped eggs whites through the chocolate mixture. Pour into cake tin and bake for approx 45 minutes to 1 hour.
Remove from tin. Allow to cool, cut cake in half and fill with mousse mixture.
Brush top of cake with warm apricot jam (you can warm your jam in your Thermomix on 100 deg on speed 1 for 4 minutes)
Pour chocolate ganache over the top of your torte.
Chocolate Ganache and Chocolate Mousse
Place cream in TM bowl and boil on 100 deg on speed 1 for 5-6minutes when boiling add your chocolate. Blend on speed 3 until smooth and chocolate has completely melted. Remove 1/2 the mixture to pour over your torte. Insert the butterfly attachment and beat the rest of the chocolate on speed 4 for 5 minutes to make your mousse to fill your torte.
Tip: use the best chocolate you can buy.

Epic fail! Egg whites turned to water following instructions to the T, ended up not wanting to waste 10 eggs! So I added the watery concoction anyway and ended up with a dense cake that rose well anyway, was still moist, just not the objective light fluffy one that it was meant to be....then the chocolate mousse wouldn't whip, adding more cream to no avail! But the set aside ganache was a beautiful consistency and tasted wonderful.
