Soda Water Scones
- 35 g sugar
- 1/2 tsp salt
- 450 g self-raising flour
- 210 g cream
- 190 g soda water

- Heat the oven to 190ºC. Grease a flat baking tray.
- Place the sugar and salt into the mixing bowl. Mix 10 seconds / speed 9.
- Add all the remaining ingredients & knead 20 seconds"Dough mode" .
- Scrape the mixture out onto a lightly floured work surface & knead lightly, quickly and gently to form a smooth dough.
- Press the dough out to 3cm thick & cut into rounds with a 6cm cutter. Re-knead any offcuts & cut out more rounds but only do this once, as the dough becomes heavy with repeated handling.
- Place the scones onto the baking tray so they are touching each other.
- Bake in the centre of the oven for 15-18 minutes, lowering the temperature to 175ºC after 5 minutes or once the scones have risen.
- Transfer the scones to a cooling tray.
Method
Tip
Once baked, cover the scones with a clean towel & allow to steam for soft scones, or leave uncovered for a more crunchy texture.
Scones should be eaten the day of baking either warm, or colled to room temp. They can be frozen & reheated in a warm oven.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
