Ingredients
- 125 g Butter, chopped
- 3 Bananas, ripe
- 2 eggs
- 1 tsp vanila extract
- 120 g Rapadura
- 280 g unbleached white spelt flour
- 1 tsp Cinnamon.
- 1 cup blueberries
- 4 level teaspoon baking powder

Preheat oven to 180C.
Grease and line base of a 25cm x 11cm loaf pan.
Place butter into mixing bowl and melt 1 min/90C/speed 4.
Add bananas, eggs, vanilla, rapadura, spelt flour, baking powder and cinnamon and mix 20 sec/speed 3.
Add blueberries mix for 2-3 seconds speed 4
Pour cake mixture into prepared pan and bake 1 hour, or until an inserted skewer comes out clean.
Method
Tip
Use over ripe bananas for an even more intense flavour
I used frozen blueberries straight from the freezer for this recipe, if you are using fresh blueberries fold the berries into the mixture instead of using speed 4 in case the berries bleed too much through the bread.
