I'm cooking this todayRecipe's preparation
- Preheat oven 160deg. Line baking tray with oven proof mat or paper.
Placed almonds & cashews into mixing bowl. Chop 4seconds on speed 5. Increase time for finer desired consistency.
Place nuts & buckwheat into the oven for 5mins or until golden. - Meanwhile add coconut oil, rice malt, sugar, cinnamon & vanilla to mixing bowl. Select Warm Up mode and turn to 60deg speed 2.
- Add all remaining ingredients to bowl, plus reserved roasted nuts, leaving fruit and chia seeds aside.
Mix 30sec Reverse Speed 3. - Ensure that all mixture is coated with thin layer of caramel mixture.
If you prefer a stickier/cluster style granola, repeat mixing step and add additional malt syrup through mixing bowl lid until a thicker coating is achieved. - Pour granola mix onto lined baking tray and spread evenly
- Bake in 150 degree oven for 15-20minutes, stirring mixture on the tray half way through baking so that granola mixture is an even golden brown colour. Add additional baking time if necessary
- Take out of oven and leave to completely cool. Add chia seeds and desired dried fruit.
- Store in airtight jar or container

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
