Ingredients

Cake

  • 125 grams Butter
  • 2 apples, cored, cut into quarters
  • 1 egg
  • 100 grams flour, (use 200 gm gluten-free flour mix if gluten free - replacing both flours)
  • 100 grams wholemeal flour
  • 85 grams brown sugar, (or use coconut sugar)
  • 1 level tsp baking powder
  • 1 level tsp baking soda
  • 2 level tsp mixed spice
  • 1 level tsp ground cinnamon

Topping

  • 50 grams Butter, (use quinoa flakes if gluten-free)
  • 55 grams rolled oats
  • 45 grams brown sugar, (or use coconut sugar)
  • 1 level tsp ground cinnamon

Recipe's preparation

  1. 1. Preheat oven to 180°C. Grease and line a round cake tin (20 cm) and set aside.

    2. Insert Thermomix Cutter shaft and basket then place cutting disc with side 2 (grating) facing up. Place cutter lid on cutter and insert apples one after another in wide part of feeder. Place pusher and grate thickly while gently pressing pusher down. When feeder is empty, press selector to stop. Transfer to a bowl and set aside. Remove Thermomix Cutter and shaft.

    3. Or grate apple manually.

    4. Place butter into mixing bowl and melt 2 min 30 sec/80°C/speed 1.

    5. Add grated apple, eggs, flour, sugar, baking powder, baking soda, mixed spice and cinnamon and mix 10 sec/reverse/speed 2.

    6. Pour mixture into prepared cake tin. No need to clean bowl.

    7. To make the topping, place butter into mixing bowl and melt 1 min 30 sec/80°C/speed 1. Add rolled oats, sugar and cinnamon and mix 5 sec/reverse/speed 3.

    8. Pour over top of the cake and evenly spread.

    9. Bake for 35-40 minutes (180°C) or until a wooden skewer inserted into centre of the cake comes out clean. Allow to cool in tin for 5 minutes then transfer to a wire rack.

    10. Serve warm with yoghurt or whipped cream.

Tip

I love using Granny Smith apples the best but this recipe will also work with any other apples.
