Ingredients
bun
- 200 g pitted dates
- 100 g water
- 2 --- Sachets of yeast
- 150 g Milk
- 500 g bakers flour
- 2 tsp salt
- 70 g Butter
- 50 g sugar
- 1 egg
- 1 tsp cinnamon
- 1 tsp Nutmeg
- .5 tsp ground cloves
caramel glaze
- 70 g Butter
- 70 g cream
- 120 g brown sugar
piping
- 80 g plain flour
- 80 g water
- pinch salt
- 10 g olive oil

Add dates to bowl and chop 30 sec/sp7
Add100g water and cook 2 minutes/ 100deg/ sp1. Set aside
put milk and yeast in bowl and heat 1min/ 37deg/sp1
Add flour, salt, butter, sugar, egg, cinnamon, nutmeg, cloves and reserved dates. Mix 20sec/ sp 5. Then knead for 3 mins
Put dough into a lightly grease bowl, in a warm place, to rise for 30-60 minutes or until doubled in size.
Knock dough down and portion into 12 buns. Place on a lined baking tray to rise again while you make the piping.
For the piping, add all ingredients to the bowl and mix for 30sec/ sp 4. Put mixture into a piping bag and pipe crosses on the buns.
Cook in a preheated oven on 220 degrees for 15-20 minutes depending on your oven.
While buns are cooking, make the caramel glaze. Add all ingredioents to the bowl and cook for 4 mins/ varoma temp/ sp 2
Once buns are cooked, use a patry brush to brush glaze over hot buns. Enjoy
Sticky Date Hot Cross Buns
Tip
Dough is sticky, but as long as you put it in a warm place to rise then it will double quite easily.
