Ingredients

Shortcrust Pastry

  • 250 g plain flour
  • 1 pinch sea salt
  • 100 g Unsalted butter, chilled and cubed
  • 50 g icing sugar
  • 3 egg yolks
  • 1 orange, rind only

Custard filling

  • 100 g sugar
  • 30 g cornflour
  • 2 eggs
  • 500 g Milk

Fruit topping

  • 250 g strawberries
  • 2 tbsp apricot jam
  • 1 tbsp Boiling water

Recipe's preparation

    Pastry
  1. Place orange rind and icing sugar in TM bowl and mill 10 seconds speed 9

  2. Add in flour, salt, and butter, and blend 10 seconds speed 6 until mixture resembles breadcrumbs

  3. Add the egg yolks one at a time through mixing bowl lip hole and knead 30 seconds

  4. Transfer dough to thermomat or lightly floured bench top and knead into a tight ball (mixture might be a little crumbly here - that is OK).  Wrap in plastic wrap and place in refrigerator for 15-30 minutes

  5. Once chilled, roll dough out between a thermomat and sheet of baking paper (or 2 sheets of baking paper) tp ~0.5cm thickness, and either cut into individual circles to fit into small fluted tins, or place into larger pie dish.

  6. Blind bake at 180 degrees for 10 minutes, then continue baking for another 10-15 minutes until cooked through.  Set aside to cool before adding filling.

  7. Custard
  8. Place sugar and cornflour into TM bowl and mill 10 seconds speed 9

  9. Add eggs and milk to the bowl and cook 7 minutes 90 degrees speed 4

  10. Pour custard into cooled pie bases

  11. To finish
  12. Hull strawberries and finely slice.  Arrange over the top of the custard in nice patterns.

  13. Mix together the jam and hot water, stirring until smooth.  Using a pastry brush, spread a thin layer of the jam over the strawberries

  14. Serve  ideally on the same day as preparation - the pastry will soften the longer these are kept, though I have kept overnight OK.
