Ingredients

Sweet Pastry

  • 340 gram plain flour
  • pinch salt
  • 150 gram unsalted butter cubed
  • 90 gram caster sugar
  • 2 eggs

Lemon Filling

  • Zest of 3 lemons
  • 4 eggs
  • 2 egg yolks
  • 250 grams caster sugar
  • 200 grams thickened cream
  • 200 grams lemon juice

Recipe's preparation

    Sweet Pastry
  1. 1. Place flour, salt & butter into TM bowl. Mix 5secs/ speed 5 until mixed together and it resembles a bread crumb like mixture.
    2. Add sugar and mix 3secs/ speed 5.
    3. Add eggs and mix 3secs/ speed 5. Then, knead 30sec/ closed lid position/ knead button.
    4. 'Pour' mixture out onto baking paper or ThermoMat and bring together to form a ball. Wrap in glad wrap and put into the fridge for about 1hr to rest. Have a rest and a cup of tea Smile
    5. Pre-heat oven to 190C and roll out pastry to line a 23cm round fluted tart tin. I find rolling the pastry out between 2 pieces of baking paper the easiest. Trim the edges and rest in the fridge for another 10mins.

  2. Lemon Filling
  3. 1. Place lemon zest in TM bowl. Zest for 20secs/ speed 10. Scrape down sides of bowl and zest another 10 secs if required. Set aside for later.
    2. Put eggs, egg yolks and sugar into TM bowl. Mix 5secs/ speed 5
    3. Add cream, lemon juice and zest to TM bowl and mix a further 5secs/ speed 5.

  4. Putting it together
  5. 1. Line the pastry shell with a piece of baking paper and blind bake using baking beads/rice/cous cous for 10 mins. Remove the beads and bake for a further 5 mins.
    2. Reduce temperature to 150C and pour lemon filling into tart pan (there may be some left over) and bake for 35-40mins until filling is set.
    3. Rest and cool before serving. Serve as is or with double thickened cream.

Tip

    After trying to find the ultimate lemon tart recipe and using different bits of many recipes, I've finally found 'the one'! I did reduce sugar by 50g, and had enough mixture, pastry and lemon for 4 mini tarts as well. The best lemon tart recipe, thanks for sharing.

    Thanks for this recipe. I love it and have made it a number of times. Family and friends have also loved it so it has become a bit of a standard offering from me. I put some zest in the pastry as well. The pastry makes enough for two tarts if you roll it out on the thinner side (the way I like it) I also add 300 mls of cream (it comes in a 300 ml container so use it all I say) and an extra egg. That way I have enough filling to fill two tarts. I agree you can easily cut back on the sugar by about 50g overall.

    So pleased with how this turned out since it's so much easier to make than the manual Recipe I used to make where I had to strain filling through a sieve on the stove etc! I used the zest of only 2 lemons as well and it was just the right level of tangy.

    Beautiful. We love extremely tangy lemon tarts. I tried it with lemon and lime and turned out great. Pastry was great. I may put in fractionally less lemon next time. Loved it but ended up with a little lemon face ☺️

    We loved it- used our bush lemons and took advice of previous posts and only added zest from 1 lemon. Used the full amount of juice. Was delicioustmrc_emoticons.) mine only took 30 minutes in fan forced.

    My husband loves anything with lemon. This was way too lemony. too much zest and too much lemon, but I will try it again with a lot less lemon zest and juice.
