Ingredients
Sweet Pastry (approx 700g)
- 90 g raw sugar, or icing sugar
- 340 g Plain Flour (or bakers)
- 150 g Unsalted Buttter (pg 17 EDC), cold, cubed
- 1 pinch salt
- 2 Eggs, Large
Filling
- 50 g lemon zest, peeled, (about 3 LARGE lemons)
- 250 g raw sugar, (or caster)
- 4 Eggs, Large
- 2 egg yolks
- 190 g double thick, heavy cream
- 250 g lemon juice, (measure out before starting)

Mill Raw Sugar (90g) for 10 Sec /speed 9.
Add flour (340g), butter (150g), salt. Combine 6 sec / speed 6.
Add eggs (2) and mix 30 sec /"Closed lid" /"Dough mode"
Tip carefully onto plastic wrap, bring together to form a ball and wrap in Gladwrap. Place in fridge for 1 hour.
Roll out pastry, cut out pastry about 4cm wider than your cake tin. Fit into cake tin and cover, lightly prick with a fork, covered with crumpled baking paper and baking beads/rice/dry chick peas. Place in fridge for 10 mins. Blind bake for 10 mins / 190 degrees. Remove baking paper and continued to bake for 5 mins.
Place zest of lemons (50g) to bowl and zest 14 sec / speed 9, pausing in middle to scrape down sides of bowl.
Add sugar (250g) and mill 10 sec / speed 9
Insert BUTTERFLY and add eggs (4) and yolks (2). Wisk for 12 sec / speed 2
With blades rotating on speed 2 slowly pour in cream and then juice.
Pour into prepared base and bake 40mins / 150 degrees or until filling is just set. Remove, cool and serve with a dollop of cream.

Tip
You could use frozen pastry from the store to cut the time by 1 hour for this dish.
The higher the sides of the pastry the more yummy filling inside.
Use a Cake tin for height instead of tart tin
