Ingredients
Quinoa
- 900 g water
- 100 g quinoa
- 20 g TM stock concentrate, optional
Mix
- 300 g peas and corn (frozen)
- 100 g chicken thigh (optional), chopped in 1 cm cubes. You could use any meat or protein
- additional veggies of choice, chopped into small pieces (could do in TM first
- 3 eggs, beaten lightly
- 20 g low salt soy sauce
- pepper to taste

Place water and stock concentrate in bowl
Add TM basket and pour in Quinoa. Close TM lid and place Varoma on top (mc removed).
In the bottom of the Varoma, place peas and corn, chicken or extra veggies of your choice.
Insert Varoma tray and line with baking paper (it will sit better if you wet the paper first and squeeze out) ensure the top side vents are not covered by the paper - this is to make sure that steam can circulate.
Place egg mixture onto paper lined Varoma tray and season with a little pepper if you like. Place lid on top of Varoma and cook 17 mins / Varoma / speed 3.
Roughly chop Omelette mixture and tip into large bowl, add veggies and Quinoa, drizzle with soy sauce and mix.
Enjoy as a side or main.

Kids & myself loved every bit... 1st time i've worked with Quinoa & actually liked it!!
I do cheat & cook my omlette in a small pan with coconut oil...
But we love the rice version & now im converted to this version!!!
Perhaps double check that it is set on varoma temperature and that not all the holes of the varoma tray are blocked by the baking paper. Because the varoma lid is see through I usually check that steam is gathering on top fogging up the lid which means there's enough steam reaching up to the dish. If you do try making this dish again I hope you have success... and let us know
Not sure what I did wrong but the egg didnt even begin to cook by the 17 minutes... Tips?
I doubled tha quinoa but otherwise followed the recipe exactly. It was so easy to make and super healthy! What a great way to utilise the steam basket and the varoma to make a complete meal. This will now be a regular in our house.
I made this last night and it was excellent! It was only my second time doing egg in the varoma so it got a little leaky but I'll get better with time.I added a few tablespoons of soy sauce and half a dozen drops of sesame oil as well. It tasted better the longer it sat. Next time I'll try adding some oyster sauce for a bit more flavour.All round, this was a 10/10 recipe. It took me a total of 3 minutes to prepare and only 17 minutes cooking time! Excellent.Thank-you!
Absolutely loved this!!! Found cooking the egg part a little tricky but was the first time I had tried to do an omelette in thermy. Very tasty, healthy & so easy to make!
