Ingredients
Cake
- 675 g dark chocolate
- 430 g Butter
- 1.5 tbsp instant coffee granules
- 315 g Boiling water
- 250 g brown sugar
- 160 g plain flour
- 65 g SR flour
- 4 eggs
- 4 tbsp Coffee liqueur
Ganache
- 100 g dark chocolate
- 80 g cream

Place chocolate in thermomix bowl and mill 10 seconds speed 9. Scrape down sides of bowl and repeat for another 10 seconds speed 9. Add butter and melt at 60 degrees for 5 minutes speed 2.
Meanwhile combine coffee granules with boiling water. Once chocolate & butter has melted together, add coffee mixture and brown sugar to thermomix bowl and mix 10 seconds speed 5, then scrape down sides and repeat
Beat eggs lightly together then add this to the thermomix bowl and mix a further 10 seconds speed 5. Scrape sides of bowl then add coffee liqueur and mix a further 10 seconds speed 5.
Sift flours into another bowl and then pour in chocolate mixture & fold together to combine.
Pour into 25cm round pan (or 23cm square) cake pan which has been greased & lined. Bake 150 minutes at 160 degrees C, or until an inserted skewer comes out clean. Cool in pan.
Place dark chocolate into mixing bowl & grate 10 seconds speed 8. Scrape down sides of bowl.
Add cream and melt 3 minutes 50 degrees speed 3.
Can either pour directly onto cool cake or allow ganache to cool completely and whip with butterfly for 1 minute speed 3 to make a fluffier frosting.
