Ingredients

Dry Ingredients

  • 150 g almonds
  • 30 g Coconut Flour
  • 45 g raw cacao powder
  • 60 g Erythritol, (original recipe calls for 120g but I found 60g fine)
  • 2 tsp Gluten Free Baking Powder
  • 1/4 - 1/2 tsp salt

Wet Ingredients

  • 1 large avocado, approx 200g
  • 60 g thickened or coconut cream, (I used thickened)
  • 3 large eggs
  • 100 g 85% chocolate, broken into bits
  • 50 g coconut oil, butter or ghee, (I used coconut oil)

Recipe's preparation

  1. 1. Turn oven on to 175°C and line a baking tray with baking paper (I used an 18cm x 27cm one)
    2. Add almonds to bowl and mill 4 secs/sp 9
    3. Add rest of dry ingredients to bowl and mix 10 secs/sp 4. Set aside
    4. Put avocado, cream and eggs into bowl and blend 10 secs/sp 6. Scrape down and repeat. Set aside. Clean and dry mixing bowl
    5. Put chocolate in bowl and chop 10 secs/sp 9
    6. Add coconut oil to bowl and melt 5 mins/50°C/sp 1
    7. Add avocado, cream and egg mixture to bowl and mix 10 secs/sp 4.5. Scrape down and repeat
    8. Add dry ingredients to bowl and blend 30 secs/sp 4.5-5, using spatula through lid if needs be
    9. Transfer to baking tray and spread out with spatula (the mixture will be quite quick)
    10. Cook for approx 20 mins, making sure the top doesn't burn
    11. Transfer to a wire cooling rack and leave to cool

    Love this recipe.This was my first time at making a keto dessert. I made it yesterday and i didnt expect it to turn so good, it was delicious. I will definately be making this again.

    Really good keto brownie, don't have erythritol, so substituted 1 scoop of stevia granules plus 2 tbsp of sugar free maple syrup. Used half sugar-free chocolate and half real dark cooking chocolate. Used mix of banana and zucchini to substitute for the avocado. Worked really well, beautiful consistency and just the right amount of sweetness. A definite new favourite diabetic treat.

    Made these using stevia drops (approx 30 drops) and they are fabulous. The best tasting keto/LCHF treat I've found so far. Thank you so much!!
