- 150 g plain flour, plus 50 g extra if required
- 40 g self-raising flour
- 70 g custard powder
- 175 g Butter, at room temperature
- 1 tsp vanilla esence
- 80 g soft icing mixture, (or icing sugar + 10g cornflour)
Filling
- 250 g icing sugar
- 40 g Butter, at room temperature
- 2 tsp vanilla esence
- 1/2 tsp lemon juice

Preheat oven to 200°C (180°C fan). Line two baking trays with baking paper.
Place flours and custard powder in bowl and mix on speed 3 for 20-30 seconds to combine. Remove from bowl and set aside.
Soften butter if required (40 seconds at 50°C on speed 4). Place butter, vanilla and icing mixture in bowl. Beat on speed 4 until pale and fluffy. Add flour mixture; mix on speed 1 until just combined, then beat on speed 4 until smooth. Add extra flour to form dough if required.
Roll a rounded teaspoon of dough into a ball and place on prepared trays. Lightly press down with a fork. Repeat with remaining dough.
Bake for 10-12 mins or until just browned. Stand for 5 mins then remove to a rack to cool completely.
Place icing sugar and butter in bowl and mix on speed 4 until pale and well combined. Add vanilla and lemon juice; mix on speed 1 to combine. Beat on speed 4 until fluffy. Add a little extra lemon juice if needed to get the correct consistency. Sandwich biscuits together with filling.

Tip
This recipe is easily doubled, just use the spatula to scrape down the bowl as necessary.
You can make the icing filling with lime juice for a different, but equally delicious flavour.
If you prefer to avoid the additives and yellow food colouring in ordinary custard powder, you can use Orgran custard powder instead, available at most health food stores. See //www.orgran.com/products/170/ for more information.

Yummo. Thanks! I added zest of one orange to the batter mixture. And squeezed the orange juice instead of lemon for the filling. I didn't have icing sugar, so used icing mixture for both bits. Seems to have turned out ok. Waiting for them to cool down so I could sandwich them was painful!
I have just finished making these biscuits. They are very yummy. I didn’t have custard powder so used cornflour and added a bit of yellow gel colour to give them some colour. They worked out well.
Made these gluten free, with gluten free flours etc. Still taste amazing
fantastic recipe, i used my own buttercream icing for the filling (as i was making a birthday cake) and they are great, 2 of my kids also liked them plain before i put the filling in, will be making again, thanks for the recipe
