Ingredients

For the loaf

  • 225 grams plain flour
  • 3 teaspoons baking soda (bicarb), (heaped)
  • 100 grams brown sugar
  • 3 teaspoons mixed spice, or you can use cinnamon
  • 3 bananas, ripe and broken into 2-3 parts
  • 75 grams olive oil, can use other vegetable oils
  • 50 grams dried fruit or nuts, (optional)

Recipe's preparation

  1. Set your oven at 200 degrees celcius

     

    Place your bananas with olive oil into the jug- Speed 5 for 3 seconds

     

    Add all other ingredients (except for dried fruit and nuts if you are using them). - Speed 5 for 3 seconds, then use a spatula to scrape the sides of the bowl 

     

    Speed 5 for a further 10 seconds to ensure good combining but be sure not to overmix. 

     

    Add any other ingredients and use the spatula to stil through. 

     

    This mixture is quite thick. Pour it into a prepared tin and into the oven for 20 minutes initially. If the loaf is browning, cover with foil and bake for a further 40 minutes (approximately). 

     

    When cooked, wait until the bread is cool before slicing. 

     

Tip

You can use self raising flour in place of plain flour, and reduce the baking soda to 2 teaspoons. 

 

I like to make this recpie with walnuts, a great combination with the banana

    Inedible tmrc_emoticons.( after reading comments i cooked at 180deg for 20min then reduced to 170 for another 30min,
    Tastes burnt and bitter
    I do not recommend this recipe at all.

    I have made this banana bread last weekend and I loved it. Very easy to make, just a few ingredients and the texture was a mix between bread and cake.
    Next time I will try with a little bit less sugar tmrc_emoticons.)

    Fits perfectly in a loaf pan. Cooked for 20 mins, covered with foil as it was browning. I reduced oven temp to 180C. Cooked for another 15 mins. Turned oven off and left in for 15 mins. The edges were a little too well done. So, next time, I'd start with 180C, not 200C.
    The cake was not bitter at all. It had a nice texture, not too well done.

    This recipe is bitter. I think the oven temperature is too high at 200C - the bread is burnt but the time it's finished. Texture is more like a cake than bread. Complete waste of time and ingredients. Sorry but found a much better recipe than this.

    Found this bread quite bitter in taste, even with butter and honey, no one wants to eat it, any ideas? I folowed recipe exactly
