Gluten Free Feijoa Cake

  • 3 eggs
  • 50g raw sugar
  • 100g macadamia oil
  • 120g Feijoa pulp (or thick smoothie)
  • 100g gluten free flour
  • 2 teaspoon baking powder
  • 70g ground almonds

Not Gluten Free Milky Bar Kid Sauce

  • 375g Milky Bar white chocolate
  • 250g cream
  • 3 tsp ground ginger, (Optional)

Recipe's preparation

    Gluten Free Feijoa Cake
  1. Preheat the oven to 180 degrees and prepare a cake tin. 

  2. Grind 70g almonds for 8 seconds on speed 8 and set aside.

     

  3. Puree Feijoas for 10 seconds on speed 5 or use thick feijoa smoothie     and set aside.

  4. Beat eggs and sugar together until pale and fluffy on speed 4 for 30 seconds. 

  5. Add Macadamia oil slowly over 30 seconds through the hole in the lid whilst turning at speed 2.

  6. Add flour, baking powder and ground almonds and fold together on speed 2 for 10 seconds.

  7. Place in tin and cook for 35 minutes or until a knife comes out clean.

  10. Mill chocolate for 10 seconds on speed 8.

  11. Add cream (and ginger if you wish) and cook on 60 degrees for 2.30 minutes

Tip

Feijoas are such a fresh tasting NZ fruit, what better way to celebrate Waitangi Day.

For those not needing gluten free it is well matched with Milky Bar chocolate - a kiwi favourite of young and old alike.

If feijoas are not in season then feijoa smoothie (In juice section of supermarket) can be used as a substitute.

The use of ginger in the Milky Bar Kid sauce is optional.

This cake is so good no one will no that it is Gluten Free!

This recipe is suitable also for the TM21 and the TM21.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
