I'm cooking this today

Recipe's preparation

This is a chewy baked slice that is really quite sweet.
  1. To make the base: Add all macadamia nuts to the TM bowl and mix 3sec/turbo speed. Set mixture aside. No need to clean the bowl.

Preheat your oven to 175c fan forced or 180c gas oven

Add chopped butter for Base to TM bowl and melt 1min 30 sec/50c/speed 3.

Add remaining base ingredients being self raising flour, coconut, caster sugar and the reserved macadamia nuts and mix 10 sec/speed 4 Scrape down sides and repeat if necessary.

Line a slice tin with baking paper making sure there is an overhang on all sides. I use a 28cm x 18cm slice tin. Place all of the base mixture into the slice tin and press down firmly. Place into the preheated oven for approx 12 - 15minutes or until golden brown.

Whilst base is cooking you can start on the Filling. Clean the TM bowl and add all Filling ingredients to TM Bowl being sweetened condensed milk, chopped butter and golden syrup. Melt for 5 mins/90c/speed 3.

By now the base should be finished cooking, bring out of oven and immediately pour the Filling mixture over the base being careful not to let it run over the edge of your baking paper. The mixture should be very runny. Once mixture is evenly distributed over base place in the oven for 15mins or until golden brown.

Once slice is cool then you can prepare the white choc topping.

Break the whole 220g choc up into rough pieces. Place in a clean and dry TM Bowl and grind for 7 sec/speeed 8. Next melt the choc 4 mins/37c/speed 2. Scrape down the sides and continue mixing without temperature for 1 min/speed 2. drizzle choc over the baked slice in a pattern - be creative and have fun with it! or place choc topping on as a solid form, as I have done in the photo. Depending how large you want the pieces obviously depends on how many pieces you will get. I have cut my pieces large in the photo but I would halve these normally. Should get 20 pieces easily based on that.

Dont clean the bowl after making the choc topping instead do the following for a tasty choc drink:

Makes 1 mug of white hot chocolate (so beware as you may have to share if anyone else is around tmrc_emoticons.;))

    1. pour one mug (250g) of any type of milk you desire ie almond milk, low fat or full cream into the unwashed TM Bowl that still has white choc remnants and mix 5 sec/speed 8

    2. Heat milk for 5 mins/80c/speed 4

    3. Enjoy the gorgeous taste of fresh hot white chocolate  - no wasted choc and after your hard work its well earnt isnt it.

Lastly, Enjoy this adorable, chewy nutty coconut slice with a cuppa for afternoon tea/morning tea and make sure you share it with your loved ones.

NB: If you enjoyed eating this recipe as much as I did then please leave a comment and stars below. Thank You.

Tip

If you dont like a strong coconut taste you can choose to reduce to 60g instead of 90g dessicated coconut, I have also made this with natural coconut flakes and it was lovely.

    TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

This was my first TM dessert. The base was especially delicious. Overall a little too sweet for me, but I enjoyed making and sharing it. Thank you for posting the recipe!

This recipe went down a treat at our family picnic. I double batched it and only did 100g macadamias and 150g almonds (due to the price of macadamias and I already had heaps of almonds in the pantry) everyone commented on the crunchiness of the base and really enjoyed it. Great recipe thanks!
