Ingredients
- 250 g white chocolate
- 475 g SR flour
- 1/4 tsp baking powder
- pinch salt
- 75 g unsalted butter cubed
- 1/2 lemon zest
- 2 tsp vanilla essence
- 1 egg
- 100 g Milk
- 100 g buttermilk

Preheat oven to 180C. Line a flat baking tray with greaseproof paper.
Add white chocolate to TM bowl and chop speed 6 for 7 seconds. Set aside
Add lemon zest and sugar mill speed 9 for 7 seconds.
Add flour, baking powder, salt and butter, mix speed 6 for 10 seconds. Set aside.
Add egg, vanilla, milk and buttermilk lightly whisk together speed 4 for 1 minute.
Add flour mixture and white chocolate and with the aid of the spatula mix speed 4 for 1 min.
Turn out the dough on a floured board or bread mat. Give it a few turns and gently roll out with a floured rolling pin to a 2 1/2 (1 in) thickness.
Cut into rounds with a 5cm (2 in) scone cutter making sure not to twist the cutter.
Place scones onto prepared try approx. 2 1/2 cm (1 in) apart and bake for 18-20 minutes or until golden. Turn out onto wire rack to cool slightly.
(serve with favourite jam or conserve or Rose Butter as seen in picture)
Tip
To keep scones soft and fluffy place a dry tea towl over the scones as soon as they are removed from the oven.
