lemon kefir cake
- 140 grams Coconut sugar
- 800 grams kefir milk
- 6 eggs
- 2 zest and juice from two lemons
- 1 tsp vanilla essence
- 2 tsp baking powder
- 90 grams coconut oil
- 230 grams Coconut Flour

place lemon zest, sugar and baking powder into bowl "Closed lid" and grind 20 sec speed 8
add coconut flour "Closed lid" and grind another 20 sec speed 8
add the juice of two lemons, eggs, oil and kefir milk "Closed lid" then speed 6 for 40 secs spatula assisted
I then use my spatula manually to combine if necesssary once the jug is off the machine.
put into large lined springform - you will need to smoooth it out to edges and pat with hands as coconut flour makes the mix very fluffy and airy before cooking.
Bake for 1 hour at 180 fan until its browned and pulling away from edges and firm to the touch but it needs to be cooled in tin and even better in the oven with the door open .
