  • 2 litres full cream milk
  • 100 grams milk powder

Recipe's preparation

    Method
  1. 1. Place milk and milk powder into mixing bowl and heat 35 minutes/90°/speed3
    2. Take the bowl off the base and let it cool back to 37° (about an hour) - you may want to put it in the fridge to speed the process, or refrigerate overnight and reheat back to 37° when you are ready to make it.
    3. When cooled add yoghurt starter and cook 12 minutes/37°/speed3
    4. ^TM6^ leave mixture in bowl and pop into Fermentation mode 8 hours/45°
    Or pour mixture into a Thermoserver, wrap in blankets and leave to sit for 8 hours
    OR
    Use a dehydrator at 37° for 8 hours
    OR
    5. ^TM6^ Varoma fermenting - reduce milk by 250g at the beginning, Follow recipe as per usual, at step 5: pour mixture into white thermosever and place lid on, and whole Thermoserver into the Varoma. Clean the mixing bowl, and add 250g water + 50g lemon juice or vinegar. Place the Varoma into position, and pop the TM6 into fermentation mode 8 hours 70°


    TM5 owners - you can use the automated yoghurt recipe - follow steps 1 &2 -heat your milk to 90°, let it cool then proceed with the automated recipe, adding the milk powder and yoghurt when prompted

    For sweetened yoghurt, add vanilla and sugar
    Add cream for a creamier yoghurt

    **If using UHT milk or milk powder + water mix -
    you can omit the first step of heating and cooling the milk,
    and start at step 3.

    Make sure the 120 -150g yoghurt is a pot set, full fat yoghurt with live cultures.
    After you've made this batch, keep 120-150g aside to use in the next batch

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
