Recipe's preparation

  1. Lightly peel fruit with vegetable peeler to remove zest in strips (don't press too hard with the peeler or you'll end up with the pith as well).

  2. Drying using dehydrator
    Spread strips of zest onto dehydrator trays and dry until zest is dry and crispy (they should snap if you bend them). I find they take about 4hrs in my machine.


    Drying using oven
    Spread strips of zest onto a baking tray and dry in a very low oven until dry. Time with vary depending on oven temperature. 

  3. Place zest into Thermomix bowl and whiz on sp9 for about 30 seconds. Scrape down sides of the bowl and repeat until powder is fine with no gritty bits in it. 


     

  4. Store in an airtight jar and use as needed. 


    I estimate that 1tsp of this powder = the zest of 1 small lemon.

Tip

This is a great way to use up excess lemons and other citrus  when they're in season.

You could also do a mix of different citrus together. 

I love using this in lemon custard instead of fresh lemon zest as I prefer my custard to be lovely and smooth.

    Had a load of oranges given to me and there is only so much marmalade I need so decided to make this citrus powder plus i needed an excuse to buy a dehydrator, have wanted one for quite some time. It turned out perfect and the smell was beautiful. Now on the look out for some cheap lemons or a lemon tree ha ha. Thanks

    Sorry for the late reply, I've only just seen your question. My current dehydrator is just a basic Sunbeam one, comes with 5 plastic trays. Mine is the older model that only has 1 temperature setting (you just turn it on tmrc_emoticons.) ) and I have a basic timer that goes between the plug and the power point and that's how I set the drying times.
