  • 40 g Butter
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 220 g Milk, plus extra for brushing

Recipe's preparation

  1. Pre heat your oven to 200 deg

  2. Place flour, salt, baking powder and butter into TM Bowl and mix 3sec/sp8.

  3. Add milk and bring together for  approximately 15sec/dough mode or until combined. 

  4. Tip onto a floured bench and knead lightly by hand and then shape to about 2.5cm thick, adding a little extra flour if required. 


    It is REALLY IMPORTANT that you don't overwork the scone mix otherwise they won't turn out lovely and light, stead they'll be solid little bricks. This is why we only bring together the mix for 15 sec's in the thermomix and then knead lightly by hand. 

  5. Use a scone cutter, glass or even just a knife to cut out about 12 scones (they don't have to be round). Place onto a baking tray lined with baking paper. 

  6. Brush scones with milk and let them rest for 5 minutes before putting them in the oven. This is the other REALLY IMPORTANT step to fabulous scones. 

  7. Bake for about 14 minutes or until golden brown. 

  8. Enjoy with your preference of butter, jam and cream. 

Tip

This is my Mum's scone recipe and I would guess that she has made 10's of 1000's of scones over the years. It has been widely shared, especially around the Hills in Perth because when people taste them they always want the recipe. If you know Gwynne Evans then you probably know her scones tmrc_emoticons.) 

There are her tips that I always follow: It is really important that you don't over work the scone mix. Use your thermomix to rub the butter into the dry ingredients and then combine everything together. 
The end result is worth taking the minute or so to knead the mix gently by hand.

    My scones turned out really well, I followed the exact recipe and the tips and ended up with 8 scones. My husband said they were the best scones he's ever had. Because they turned out so well I thought I'd double the recipe to give some to our friends. The mixture didn't look as good but tasted the same. Next time I think I'd just make two batches.

    Quick, easy, perfect!
    I made 8 larger scones, cooked for 17 mins on 200g fan forced. Left to cool slightly uncovered and they were slightly crispy on the outside and soft and fluffy inside.

    Amazing! I have tried many scone recipes over the years, but I've finally found the ONE! Thank you so much. I cooked mine at 200 in a fan forced oven. I like my scones big, so it means I only made 6. I hope the recipe works well doubled! I might lessen the salt a smidgen too.
