Ingredients

Batter

  • 170 g Almond milk
  • 50 g almonds
  • 60 g Arrowroot Flour.
  • 2 tbsp Shredded coconut
  • 5 g apple cider vinegar
  • 2 tsp baking powder (GF)
  • 20 g Sweetener of choice
  • 2 eggs
  • pinch of salt

Recipe's preparation

  1. Place Almonds, Coconut & Arrowroot flour in bowl and mill 10 sec/sp10. 

  2. Add all other ingredients and combine 5 sec/sp5. Scrape down sides and base of bowl and combine again for 5 sec/sp5.

  3. Let rest for for 5 mins until thickens to normal pikelet consistancy

  4. Cook in non stick frypan for a few minutes each side (look for bubbles on top before flipping). I cook 6 large 15cm pikelets from this recipe as I can't be bothered standing over the stove for any length of time. 

    These taste the closest to old fashion pikelets that I have found to date.

Tip

You can use any form of milk in the recipe. I used rice malt syrup as a sweetner but honey or maple would be fine. The ACV is to activate the baking powder and can not be tasted but makes the pikelets nice and fluffy

    What a flavour! I was expecting these to be thin, from the comments. Not thick like picture and because they ran over the pan in weird shapes - not round!

    So in the end I got a small pan and just did one at a time.

    And have to say found a fantastic thing. you could roll them just like a crepe. Flavour is so good can put fruit or savoury filling. We had a ball!

    Thank you for such a delicious paleo recipe. And so satisfying. Not eggy or brittle - Iam so amazed. When no-one is looking I am going to cook another batch and sneak them into the freezer tmrc_emoticons.)

    These were great! I used green banana flour instead of the tapioca (in part) as I didn't quite have enough for the recipe. I put in less milk than the first batch i'd made and they were devoured by all 3 of my kids without question. Usually they are pretty fussy!

    Great recipe!  Kids and the husband all gobbled these up.  Double batch did 3 teenage kids and 2 adults for afternoon tea easily! Not as thick as normal pikelets but the consistency is great!  A keeper recipe!
