- 2 heaped tablespoon Butter, Melted in thermo
- 2 --- eggs
- 8 tablespoons sugar, I use what ever sugar I have in the cupboard raw / white or caster
- 200 grams self rasing flour, Optional sifted
- 150 grams Milk
- 1/4 teaspoon bicarbonate soda
- 1/2 teaspoon vanilla, Optional
- pinch salt, Optional

Gather all ingredients and utensils and place near thermo"Closed lid"
This is a double batch as I found a single batch just was not enough for a family of 4 !
Method :
add butter into thermo "Closed lid" and speed 3 , 50 degrees 20 seconds
all all remaining ingridents and mix 15/20 seconds speed 5 !
Pour heaped tablespoons into preheated greased saucepan and cook on one side
untill bubbles form then flip and cook on other side !
serve with margarine ! Syrup , fresh fruit or with jam and cream when cooled is yum !

Tip
I also use thermo server to keep pikeles warm if u want to have mini pancakes so yum !

My husband had been buying the Cripps store bought pikelets at $3 a packet of 8. I couldn't justify when I could make more for less. He loved this recipe. I only used 6table spoons of raw sugar And Will make every week!

Wow! These are YUM. At first I was a bit worried because the pikelet mixture is a lot thinner than I'm used to. These turned out so lovely and light. I will use less sugar next time as I did find them a little too sweet. I will definitely make again.
Yum yum yum yum yum! I have been making these for years and these are the best ones that I have tried.
I melted the butter for a bit longer and halved the sugar.
These really were yum! Made 17 large pikelets. Used 6 T caster sugar (100g) which was plenty. Heated the butter for longer as it was just out of the fridge.
Just melted in your mouth, so soft and fluffy. Will certainly be making again.
Made these for breakfast for the family and they were delicious!
