Ingredients

Chicken stuffing

  • 1 Small brown onion, Quartered
  • 1 carrot, Quartered
  • 2 Stalks of celery
  • 2-3 heaped tablespoon Mixed fresh herbs, Thyme, rosemary, oregano, Italian parsley
  • 1 egg, Lightly beaten
  • 1 1/4 1 1/4 cup Italian style fresh breadcrumbs
  • 20 g olive oil

Recipe's preparation

    Stuffing
  1. Place celery, onion, carrot and fresh herbs into TM bowl with and chop for 8 secs on speed 7 (or until chopped finely)

    Add olive oil and sautée on varoma,speed 1 for 3 mins

    Allow mixture to cool slightly

    Add breadcrumbs and egg and mix on speed 5 for 5 secs

Tip

Makes enough stuffing to fill a 2 kg chicken

    Hi Rachel
    I'd like to try this stuffing out tonight but am confused by the amount of breadcrumbs. Is it 1 & a quarter cups of breadcrumbs or 2 & a half cups? I'm not sure if the 1 1/4 is meant to be listed twice in the ingredients list. Can you clarify please?

    Trying this today in a chicken for our Christmas Eve roast dinner, we've added basil with the herbs and garlic as well and are using gluten free bread, smells delicious!

    Yum! we made a few modifications to take out the egg and it worked great! We replaced the egg with 100mls water and a tsp of Closed lid"Closed lid" stock Big Smile - happy days! Thanks for sharing!
