Ingredients

  • 370 g lukewarm water
  • 2 level teaspoons dry yeast
  • 1 heaped teaspoon Rapadura Sugar
  • 300 g wholemeal spelt four, bio-dynamic
  • 300 g white spelt flour, bio-dynamic
  • 1 level teaspoon Himalayan salt
  • 2 level teaspoons bread improver
  • 3 heaped tablespoons chia seeds
  • 2 heaped tablespoons whey powder, NatureFirst
  • 1 level tablespoon olive oil

Recipe's preparation

    Step 1
  1. Put all ingredients in Thermomix bowl in order as listed in ingredients list

  2. Step 2.
  3. Place lid and MC on thermomix, set for 7 seconds on speed 7. Then set to 6mins / Dough mode"Dough mode"

  4. Step 3.
  5. Let dough rise for 20 mins, either in mixing bowl or placed in thermomat.

    After 20 minutes knock down dough and shape.

    Place into bread tin, and let rise until dough has risen at least 1cm above tin. this can take 1-1.5 hours.

    I use a jumbo Mackies tin.

     

  6. Step 4.
  7. Once dough has reach the desired height, place into moderate oven (preheated oven) for 30 minutes.

    *Please note that all ovens are different and may require different cooking times. 

    Bread is cooked when it sounds hollow on tapping.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
