  • 125 grams lard
  • 1 tablespoon brown sugar
  • 500 grams bakers flour
  • 400 grams warm water
  • pinch salt

Recipe's preparation

  1. Place brown sugar into mixing bowl & grind 5 sec/speed 10.

     

  2. Pour water and yeast into mixing bowl 6 sec/speed 4.

     

  3. Add flour and mix 20 sec/speed 6.

  4. Knead for 1.5 mins/Dough mode"Dough mode" . Place dough in bowl and leave to rise for 45 mins.

     

  5. Clean mixing bowl and dry it.

     

  6. Place butter and lard into mixing bowl and mix 10-15 sec/speed 6. Scrape down sides of bowl and mix again 10-15 sec/speed 6.

     

  7. Empty mixture into a bowl.

  8.  Put dough back into mixing bowl. Add a large tablespoon of butter and lard mix into mixing bowl and knead 20 sec/Dough mode"Dough mode" . Repeat this step approx 5 times till all butter mix is added to the dough.

     

  9. Preheat oven to 200°C.

     

  10. Divide dough into small oval portions on a baking tray lined with baking paper. Allow to rise again , up to around 45 mins depending on warmth. place in oven and bake for around 20 mins.

Tip

My original recipe said to bake for 15 mins, but I needed to do for quite a bit longer, I like my Butteries quite golden brown in colour, but some prefer them much paler, so 15-20 mins would be fine. 

Butteries are a traditional snack or breakfast roll made in and around the Aberdeen area of Scotland. My parents are both from Aberdeenshire & I spent many long holidays staying with my grandparents in Aberdeenshire. I loved the local Butteries and we would take lots home to London to freeze and save for  treats.  Now I live "Down Under" & have a magic Thermomix I decided I would have a go at making some myself , as not much chance of anyone being able to smuggle me some over. This was my first attempt, but I was very pleased with the result.

    Made these today. Never made rowies before

    They look the part but the taste not quite there, not sure what was missing.
    i added 2 teaspoons of yeast.

    Tried them and they are good, a bit dense but probably my skills rather than the recipe.
    Having eaten them for many years when in Aberdeen I now know these should be an occasional treat after seeing the ingredients!!

    There's were great because I rolled them & lathered them in the fat & rested & repeated over & over. As good as the ones I've had in Aberdeen many times. However without this step, as my Aberdonian husband did, they came out too dense & more like bread! But thanks the ingredients make a perfect mixture!

    I am an Aberdonian and always have to get my husband to make these for me.  Now tho........theres nae stoppin this quine!!!  Big Smile

    Too much lard for me.  I've got Aitkins recipe and you need to add butter and lard as you would puff pastry, roll out spread mix, fold over, roll out, add more mix, fold over etc.  won't turn out soo bread like
