Ingredients

  • 125 g plain flour
  • 50 g cocoa powder, dutch is best
  • 1 tsp baking soda
  • .25 tsp salt, pink is best
  • 115 g Butter, melted
  • 3 bananas, large
  • 145 g brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 170 g dark chocolate, chunks

Recipe's preparation

  1. Preheat oven to 160C FF.

  2. Add flour, cocoa poweder, baking soda and salt to the bowl.  Sift on sp3/10sec, set aside.

  3. Add butter to the bowl and melt on sp3/50C/3min.

  4. Add banana to the bowl and mash on sp4/3sec.

  5. Add to the bowl and mix to combine, brown sugar, egg and vanilla extract sp3/10sec, scrape down sides of bowl.

  6. Add to the bowl and mix to just combine dry ingredients, interval speed/2 rotations(5-7sec).

  7. Add to the bowl and stir through chocolate chunks interval speed/2 rotations(5-7sec).

  8. Pour into a lined loaf tin and bake for 40-50min.

Tip

This is best enjoyed straight from the oven so the choc chunks are still gooey.

    Delicious! Needed to use up some bananas I had frozen, reduced the amount and changed the type of sugar to suit our preferences and used a lesser amount of cacao instead of cocoa. Baked as muffins not as a whole loaf. All in all a scrumptious afternoon tea. Thanks for sharing!

    Fabulous recipe.

    The kids loved them (We all did). It was the perfect amount of batter  to fill 2, 6 cup silicone mini loaf trays (12 cakes in total) and I adjusted cooking time accordingly. Will definitely be making them again.
