Dough

  • 250 g tasty cheese in chunks
  • 250 g tapioca flour
  • 2 teaspoon Bi-Carb Soda (Baking Soda)
  • 1 egg
  • 6-8 tablespoons Milk
  • bunch mixed herbs (if wanted)

Recipe's preparation

  1. Preheat oven to 180 degrees celcius and line a large tray with baking paper.

  2. Place cheese(and herbs if using); in thermomix and blend for 30 seconds on speed 4.

  3. Add tapioca flour and bi-carb soda and blend for a further 30 seconds on speed 4. Mixture should resemble very fine bread crumbs.

  4. Add egg, lock lid and press turbo 4-5 times or until egg is combined.

  5. Add 5tb milk and blend on speed 3 for 10 seconds to form a soft dough. Add more milk and mix again until the dough is formed. 

  6. Roll dough into 20 balls and spread them out on the baking tray before placing in the freezer for 5 minutes

  7. Remove from freezer and place them straight into the moderate oven and cook for 15 minutes or until just golden

Tip

These are best warm out of oven or soon after. 

 I love the original version of these but found the about of cheese not good on my stomach so played and now use this variant. 

I use "Zymil" to make lactose free to stay in FODMAP.
