Ingredients

Sweet Potato Bread with Walnuts and Maple syrup

  • 250g sweet potato, cooked and mashed
  • 2tsp dried yeast
  • pinch salt
  • 450g bread flour
  • 3tbs Canadian maple syrup
  • 50g Walnuts Chopped finely
  • 1tsp bread improver
  • 1tsp salt

Maple Syrup butter

  • 150g soft butter
  • 2 tbs Canadian maple syrup
  • pinch salt to taste

Recipe's preparation

    sweet potatoes
  1. peel, cut into smaller pieces
    place in basket
    add 600g water to bowl
    place basket in bowl
    time 20min varoma speed 2
    when soft remove from bowl
    tip water out
    place cooked potato in bowl
    mash potato 10sec, speed 4
    allow to cool
  2. add yeast to bowl with 180 lukewarm water
  3. add all ingredients to bowl and knead for 3mins to form a smooth dough place in a greased bowl and allow to prove double size.
  4. preheat oven 200% place soft slightly wet dough into tin with a lid for approx 1hr
  5. MAPLE SYRUP BUTTER
    place 2 tbs maple syrup
    150g butter into bowl
    20sec speed 4
    place in a dish for spreading later on your bread

Tip

the dough will be wet do not add any more flour
