Ingredients

Cookie Toppings

  • 3 g instant coffee granules, or green tea powder
  • 5 g hot water
  • 35 g sugar
  • 40 g plain flour
  • 40 g unsalted butter, room temperature
  • 1/2 pieces egg, (use the remaining half for dough)

DOUGH

  • 100 g Milk
  • 4 g dried instant yeast
  • 200 g Flour, Plain, (bread flour)
  • 30 g unsalted butter, room temperature
  • 25 g sugar
  • 1/2 pieces eggs, (use the remaining half for dough)
  • 3 g salt

BUTTER FILLINGS

  • 6 pieces Butter, of 8 grams each, store in freezer until ready to use

Recipe's preparation

    Making Cookie Toppings
  1. Mix coffee granules / green tea powder with hot water in a small bowl. Set aside.
  2. Add sugar into TM bowl. Mill 20 seconds / Speed 10.
  3. Add butter into icing sugar in the TM bowl. Mix 30 seconds / Speed 3.
  4. Add 1/2 egg and coffee mixture, mix 10 seconds / Speed 3.
  5. Add flour. Mix 10 seconds / Speed 3. Scrape down & repeat 10 seconds / Speed 3.
  6. Place into piping bag and chill in the fridge until ready to use.
  7. Making Bread Dough
  8. Clean and dry mixing bowl.
  9. Add milk, sugar, yeast & 1/2 egg into TM bowl. Warm 2mins / 37’C / Speed 1.
  10. Add bread flour & salt. Dough mode"Dough mode" Knead 3 minutes.
  11. Add butter. Dough mode"Dough mode" Knead 2 minutes.
  12. Shape into one big ball and proof for 1 hour or until doubled in size. Degas (punch down dough to let inside gas out). Divide into 6 small balls. Cover & rest for 15 minutes.
  13. Flatten each ball & place 1x 8g butter in the middle. Cover and shape into a ball gently. Place on baking tray. Proof for 35 minutes.
  14. Pipe toppings on top of each ball in circular motion.
  15. Bake in preheated oven 180’C for 18-20 mins. Serve warm.
