Amazing Apricot Balls
- 400 grams condensed milk, (approx 1 can)
- 300 grams dried apricots
- 250 grams Arrowroot Biscuits, (or plain biscuits of your choice)
- 100 grams Desiccated Coconut, (approx)

- Place pack of biscuits in bowl for 10 seconds, speed 10, MC on. If not crushed completely use spatula to move around and put on for about 5 seconds, speed 10, MC on. Once crushed pour into a spare bowl to re add later.
- Place dried apricots into bowl and chop for 10 seconds, speed 6, MC on.
- Return biscuit powder to bowl of chopped apricots and add condensed milk. Mix reverse speed 4, 15-20 seconds, MC on.
- In a small bowl add the desiccated coconut. Using the spatula remove small amounts of the apricot mixture and roll into balls. Roll the apricot balls into the desiccated coconut and place into a container or serving dish. Refrigerate for 30-90 min until firm. (Also delicious room temp)

Tip
When mixing in the condensed milk, make sure this step is done fairly quickly as the mixture becomes very sticky and thermo may struggle to mix.
Also do not double the recipe in the TM5.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Very simple. Very sticky, so added half the coconut to the mixture at the end. Think they need a bit more texture, might try roughly crushing the biscuits instead of crushing to a powder next time
