Arroz Doce - Portuguese Rice pudding
- 1000 g water
- 3 level tbsp Butter, salted or unsalted
- 0.5 level teaspoons salt
- 300 g Arborio rice., This is my preference, however its optional
- 600 g full cream milk
- 1 stick cinnamon
- 2 Lemon peel
- 4 egg yolks
- 250g white sugar
- cinnamon for garnish

- 1. Add water into TM jug, with 2 tbsp butter (optional) and salt.
2. Add basket to TM jug and weigh rice. Place lid ontop of jug with MC.
3. Set to cook for 25min / 100 degrees / speed 4 or until tender.
4. Remove basket and set aside, dispose of water.
5. Add milk, 1tbsp butter, cinnamon stick and lemon peel to bowl and cook 10 min / 90 degrees / "Counter-clockwise operation" reverse / "Gentle stir setting" stir
6. Remove cinnamon stick, add rice to bowl (without basket) and stir in with a spatula.
7. In a seperate bowl beat the eggs yolks together and add a few tbsp of the rice mixture to temper the eggs.
8. Add sugar and egg yolks to jug and mix it together softly with a spatula
9. Cook for a futher 10 min / 90 degrees / "Counter-clockwise operation" reverse / 1.5 speed.
The rice should have formed a creamy consistency. Remove lemon peel, mixture with a spatula and let it sit for a few minutes, before transferring to a large serving dish or ramekins. Garnish with cinnamon. Enjoy!!!
