Ingredients
Ice Cream
- 700 g water
- 10 medjool dates, pitted
- 2 bananas, large
- 100 g Hemp Seeds
- 1/2 teaspoon Ground Vanilla Pod or Vanilla Bean
- 1 pinch Himalayan or Celtic Sea Salt, ground
- 80 g Raw Cashew Nuts

Peel the bananas and freeze in a plastic bag or airtight container
Place the Hemp Seeds and Water in the Thermomix and blend for 1 minute / Speed 8
Add the remainding ingredients (exept the bananas and cashews) and mix for a further 1 minute / Speed 9
Place the liquid into an airtight container and leave in the freezer overnight (or until completely frozen, approximately 5hours minimum)
Soak the Cashews in lightly salted water for between 3-5hours. Pat dry with a tea towel or paper towel. You may wish to time this in with allowing the mixture in the freezer to set.
Scoop the ice cream mixture into the thermomix, add the frozen Bananas and blend 30 Seconds / Speed 9
Add the Cashew Nuts and just mix through for 5 Seconds / "Counter-clockwise operation" / Speed 4
Serve immediately or Refreeze for later!

Tip
Hemp seeds are a highly nutritious food! They are relitavely new to Australia but have a very pleasant taste and due to their softness, there is no need to strain them after blending with water. You can add an additional banana or change the number of dates to suit your sweet tooth.
I highly recommend serving this lovely dessert with maple syrup and your favourite berries (blueberries go beautifully!). I hope you love this naughty but nice recipe!
