Ingredients

Baz’s Chocolate Chunk Pretzel Cookies

  • 200 g milk chocolate chips
  • 180 g white chocolate, Block cut into squares
  • 120 g milk chocolate, Block cut into squares
  • 50 g Pretzels, Broken up and extra to put on each cookie
  • 250 g Salted butter, Cut into cubes and softened
  • 180 g brown sugar
  • 110 g caster sugar
  • 1 portions egg
  • 1 tsp vanilla extract
  • 340 g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 tsp salt

Recipe's preparation

  1. Preheat oven to 180 and line 2 XL oven trays with baking paper.
  2. Place a large bowl on to mixing bowl lid. Weigh in all chocolate and pretzels and set aside.
  3. Add butter, brown sugar and caster sugar into mixing bowl and cream together sp4/1min
  4. Scrape down the sides of the bowl. Add the egg and vanilla extract and mix sp3.5/15sec
  5. Add only 240g of the plain flour, bicarb soda and salt and mix sp4/15sec
  6. Put remaining 100g flour in mixing bowl and stir with a spatular a few times, making sure not to over mix. It's okay if you still have flour not combined.
  7. Tip dough into bowl with chocolate and pretzels. Tip: use turbo mode to get all the dough from around the blades out.
  8. Mix dough and chocolate together with spatular until just combined. Put in the fridge for 20-30 minutes to chill
  9. Grab 1/3 cup amount of dough and place on prepared baking tray. Be careful not to roll into a ball or flatten them out. Should get 18 cookies.
  10. Place 1 pretzel on top of each cookie dough ball and bake for 13-15 minutes.
  11. Allow to cool on tray for 15 minutes before transferring to a wire rack to cool completely.

Tip

When cookies are straight out of the oven and hot, you can use a large cookie cutter that fits around them to scoot around in a circle to get them into a nice round shape.
