Recipe's preparation

    COULIS
  1. Add berries and sugar then blitz 5s speed 8.
Scrape down sides of bowl and repeat.
    Add lemon juice
    5 mins / 60°/ speed 2
    Blitz 10s speed 8
  2. PUDDING
  3. Without cleaning bowl add sugar, 4s speed 10
    Add butter 10s speed 6
Add eggs, bi carb and flour 30s speed 6
Scrape into pudding dish on top of coulis (see tip)
Bake in slow oven at 160° for 60 mins or until cake springs back

Tip

Its normal for the pudding mix to be quite thick and difficult to spread evenly over coulis. Just distribute tablespoons of mixture over the top and dont worry too much for it to be even.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

I do suggest cleaning the bowl between the coulis and the pudding mix. I didn't and my cake mix turned an unappealing shade of slate grey.

I used mixed frozen berries and the flavour of the pudding was lovely.  The only difficulty I had was not knowing how long it would take to cook, as we were entertaining at the time.  I started with 30 minutes then had to keep increasing the time in 10 minute increments up to about an hour and even by the time I served it, the pudding was somewhat undercooked in the middle.  I'll try this again alllowing much more time for it to cook.  Thank you for the recipe.

Delicious, I used frozen mulberries and it was a hit in our house with a dollop of fresh cream. Very quick and easy. Thank You!
