Ingredients
Blueberries
- 150 g blueberries
- 30 g raw sugar
Biscuit base
- 6 Digestive biscuits
- 30 g Butter
Mascarpone cream
- 250 g mascarpoone
- 4 tbsp double cream
- 4 tbsp raw sugar
- 1 juice and zest of 1 lemon

Place sugar in TM bowl mill for 6 sec/speed 9.
Add half of the blueberries 75g mix for 5sec/speed 2.
Cook 4.5 min/100C/speed 3.
Add remaining berries and mix 5sec/"Counter-clockwise operation" /speed 2.
Set aside to chill.
Melt butter for 2 min/60C/speed 2.
Add biscuits and blend for 5 sec/speed 7.
Press biscuit base into the bottom of 4 glasses and refrigerate for 15min.
Place sugar and lemon zest in TM bowl and mill for 20 sec/speed 9.
Add mascarpone, double cream and lemon juice whip for 20 sec/speed 3.
Spread the mascarpone cream on top of the biscuit base and top with Blueberries.
