- 400 g white chocolate
- 125 g thicken cream
- 1/4 teaspoon Peppermint Essence
- 10 Peppermint candy canes

1. Break chocolate into pieces and place into bowl. Add cream and peppermint essence. Melt on 50 deg. Speed 1 for 3 mins. Transfer mixture into another bowl and place in the fridge for 4 hours to chill.
2. Meanwhile in a clean bowl crush candy canes on turbo for 1 sec. Set aside.
3. Line a tray with non-stick baking paper. Roll teaspoonful of chocolate mixture into a ball. Then roll ball into the bowl of crushed candy canes. Place on the prepared tray. Repeat with remaining chocolate mixture.
4. Place in mini cupcake liners.
Tip
Roll in candy canes the day you plan to serve them. As the candy will get sticky from absorbing the moisture in the chocolate.
