Caramel Drops
- 150 grams plain flour
- 120 grams Butter, chopped
- 50 grams raw sugar
- 1 cans condensed milk, or make your own
- 2 tbsp golden syrup
- 200 gram milk or dark chocolate, melted

- Preheat oven to 180 degrees (fan forced). Grease silicone mini muffin trays (will make approx 30 mini drops).
- Add raw sugar to mixing bowl and mill sp 10, 5 secs.
- Add flour and 90g of the butter, mix using turbo set to 2 sec, 5 times till crumbly but comes together when pinched.
- press approx 2 teas of mixture into the base of the mini muffin holes. Then bake in preheated oven for 10 mins. Then remove but do not turn off oven.
- Clean and dry mixing bowl.
- Add can of condensed milk (or 395g), remaining 30g butter and 2 tablespoon of syrup.
- Mix until butter melts. 4 mins 70 degrees sp 1.5. Extend time if required.
- Pour hot caramel over hot biscuit bases. Then return to oven and bake for 10 mins until caramel starts to blister and set. Remove from oven and allow to cool completely.
- Once tarts have completely cooled, sometimes I leave in fridge overnight then carefully pop out from the silicone tray.
- Melt chocolate in Thermomix or microwave and then spread over top of caramel tarts. Return to fridge until serving. Enjoy!
Tip
You can easily make condensed milk in your Thermomix. I use the recipe for Condensed milk from www.cookidoo.com.au
Allow condensed milk to cool and chill before using in this recipe.
Use silicone mini muffin trays as the little tarts are super delicate and it is so much easier to remove once set from the silicone.
These very morish desserts can be made ahead of time and keep well in the fridge.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
