- 80 grams Butter
- 170 grams brown sugar
- 2 eggs
- 100 grams sour cream
- 100 grams plain flour
- 1/2 teaspoon Bi Carb Soda
- 30 grams almond meal
Caramel Sauce
- 50 grams Butter
- 100 grams brown sugar
- 120 grams cream

Preheat oven to 190deg. Grease really well a friand tray and line holes with strips of baking paper, as pictured, for easy removal of puddings.
Insert butterfly.
Add to bowl brown sugar and butter. Mix on speed 4 for 15 secs, scrape down bowl and mix for another 15 secs.
Scrape down bowl and add eggs. Mix on speed 3 for 5 secs and scrape down bowl.
Add sour cream, plain flour and bi carb soda. Mix on speed 3 for 10 secs and scrape down bowl.
Add almond meal and mix on speed 2 for 10 secs.
Divide mixture evenly between 8 friand holes. Bake in oven for 12-15 mins, being careful not to over cook. Puddings are cooked as soon as an inserted skewer comes out clean. Let stand for 10 mins before carefully removing puddings. Serve warm topped with caramel sauce. Puddings can be stored in fridge for a couple days or frozen.
Add all ingredients into bowl. Cook for 4 mins, 80 deg, speed 2. Sauce can be made up to a day ahead and reheated.
