Ingredients

Biscuit Base

  • 180 grams Cubes Butter, Salted or unsalted is your preference
  • 220 grams Flour, Plain
  • 80 grams dessicated coconut
  • 50 grams brown sugar
  • 25 grams cocoa powder, Optional

Cheese cake

  • 500 grams cream cheese, Cubed
  • 1 can sweetened condensed milk, 395g tin
  • 300 grams whipped cream, Page 46 bcb
  • 1 tsp Peppermint Essence, Add extra tsp if you want strong flavour
  • 1 dashes Green Food Colouring

Decorations

  • 150 grams whipped cream
  • 2 tbsp icing sugar
  • 12 portions Individual Mint chocolates, I used Darrel lea bb’s choc mint balls
  • 50 grams Melted Chocolate, For drizzling

Recipe's preparation

    Base
  1. melt butter in bowl 2min 50degrees sp2 Mc on

  2. add flour, coconut, cocoa if using and brown sugar mc, 10sec sp4, Counter-clockwise operation"Counter-clockwise operation" scrape down and repeat until fully combined.

  3. Press into a 25cm spring form tin; greased and lined with baking paper.

  4. Bake 10-12min in oven 180degrees Celsius. Let cool 10 min place in fridge until completely cooled.

  6. place cheese, condensed milk and peppermint extract in bowl Mc, 15sec sp4

  7. scrape down sides and add food colouring mc, 30sec sp5

  8. fold In whipped cream.

  9. Pour evenly over biscuit base. Place in fridge to set ( ideally over night but 3 hours is the minimum)

  10. decoration
  11. Decorate as you please. My method was- once set drizzle melted choc over cake, pipe cream around edges and place choc mint balls equally around edge so each serving gets one.
