Ingredients

- 50 grams coconut flakes (or dessicated)

- 200 grams Plaistowe White Chocolate
Cranberry Balls
- 150 grams dried cranberries
- 80 grams pecans
- 30 grams Pitted Dried Dates
- 30 grams lemon juice
- 6 leaves fresh mint

Put Coconut Flakes in bowl. Use Turbo function, 2 secs, twice, or until desired size of desiccated coconut for rolling cranberry balls in.
If using deissicated cocnut, skip this step.
Add all the ingredients to the bowl. Use turbo function twice at 2 secs.
Scrape down sides with spatula.
Mince then for total 20 secs on speed 7. You will need to stop and scrape down sides every 5-7 seconds as the mixture spins off the blades.
Empty bowl into a separate bowl. Wash and dry hands thoroughly.
Using melon baller, make small balls of the cranberry mixture. Alternatively, just pinch a small amount with your fingers and roll with hands into balls, approx. 1.5 - 2cm round - depending on size preference.
If using Coconut coating, roll the cranberry balls in coconut to coat.
Add some Baking paper to bottom of a plastic container, and put cranberry balls inside., and put in fridge for approx. 1 hour.

Break up white chocolate into pieces and put in bowl. Melt the chocolate for 4 mins, temp 37C, speed 2.
About halfway through, stop to scrape down sides of bowl with spatula, then continue with process.
Remove cranberry balls from fridge.
Prepare a bowl filled to approx. half with warm (not hot) water so that a glass bowl can sit over it without touching the water.
Pour melted chocolate in the glass bowl.
Using chocolate forks, or normal forks if you don't have them, dip and roll the cranberry balls in the chocolate and then put onto Baking paper and then put them in fridge to set.
Serve when ready!

Tip
I prefer using Coconut flakes and then chopping them, rather than dessicated coconut, as it always tastes a bit fresher.
You can use any brand of chocolate you prefer, however, the Plaistowe brand melts easier and more evenly. Other brands will also work, however, the time to melt may need to be adjusted. Be guided visually. Milk and dark chocolate can also be used instead of white, but I find that white chocolate doesn't override the cranberry flavour as much!
You could even combine the cocolate coating with coconut. Sprinkle the coconut over the balls as soon as they have been dipped in the chocolate.
If not using chocolate coating, this recipe has no added sugar, is non-dairy, and gluten-free.
Check the ingredients on the chocolate packaging to determine how the brand may affect any dietary preferences/requirements.

These are so amazingly yummy with a hint of mint that really tops it off. I did not have pecans but used almonds instead.
Best ever treat.
The mint is very understated, yet adds a freshness I haven't tasted in this type of snowball/bliss ball.
