Fudge
- 190 g medjool dates, pits removed
- 85 g walnuts
- 3 tsp cacao powder
- 1 tsp vanilla extract
Chocolate Coating
- 100 g dark chocolate, 70% or higher

Add all ingredients to TM bowl. Chop for 10 secs / speed 5.
Scrape down sides of bowl.
Mix 5 secs / speed 8.
Repeat until mixture is dough like in texture.
Make double mixture. Press into small 14 cm x 22 cm slice tray and refrigerate until firm. Cut into bite sized pieces.
Roll into small balls and refrigerate until firm.
Rolls into small balls and put in freezer.
Break chocolate into small pieces and place into bowl.
Grate for 10 secs / speed 9.
Melt 3 1/2 mins / 50 degrees / speed 3.
Scrape down sides of bowl.
Stir 1 min / speed 3.
Pour chocolate into small bowl. Working quickly, coat each ball in chocolate and refrigerate until firm.

Tip
Which option you choose will depend on how much time you have and how fancy you want to these to look. This is based on a recipe called Fudge Babies originally found on www.chocolatecoveredkatie.com and then modified by www.elanaspantry.com and finally by my friend Bec Duffield, before being converted to Thermomix instructions by yours truly. A well travelled and loved recipe.
