Ingredients
- 4 bananas, approx 575 gms (can be yellow)
- 4 eggs
- 140 g almond butter, or coconut, sunflower seed, macadamia nut, etc butter
- 70 g coconut oil, melted
- 75 g Coconut Flour, or almond meal, macadamia meal, etc
- 1 tablespoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon Baking Power, gluten free
- 1 teaspoon vanilla
- 1 pinch sea salt

Preheat your oven to 175 degree celcius.
Add bananas, eggs, nut butter and coconut oil to mixing bowl. Mix 6 seconds / speed 6. Scrape down sides of bowl.
Add coconut flour, cinnamon, baking soda, baking powder, vanilla and sea salt to mixing bowl. Mix 6 seconds / speed 6.
Grease a 9x5 loaf pan with a fat of your choice. Pour in your batter and spread it evenly throughout. Place in preheated oven and bake for 35-40 minutes or until a toothpick inserted in the centre comes out clean. My oven is a bit off (I need a new one) and it took about 55 minutes so check after 35-40 and then keep cooking until it is cooked through. Remove from oven and flip bread out on a cooling rack.
Slice and serve with butter, maple syrup, honey or just on it's own. Try not to eat the whole loaf before it has cooled (I dare you!).

George advises that to make these into muffins, use the same recipe and for mini muffins bake approximately 25 minutes and normal size muffins 30-35 minutes.
