Ingredients
- 1 lime, zest
- 370 g white chocolate melts
- 45 g organic extra virgin coconut oil
- 85 g glazed cherries chopped
- 85 g raisins chopped
- 30 g Coconut chips, (available in asian stores)
- 50 g organic puffed rice, (rice bubbles)
- 50 g craisins, (dried cranberry)

Place zest and chocolate into mixing bowl and mill for 10 secs/speed 9.
Add coconut oil and melt for 6 mins/37C/speed 1-2.
Add remaining ingredients and mix for 20-30 secs/"Counter-clockwise operation" /"Gentle stir setting" with the aid of the spatula.
Spread into lined 15cm baking tin and refrigerate. When completely set, turn out onto chopping board and cut into desired size.
Tip
For a smoother finish place a sheet of baking paper over the top of the mixture in the tin and smooth out. you then remove it once refigerated before cutting. ta-da nice smooth top and bottom.

Great recipe, I used mini M&M's, cranberries and sultanas, and dessicated coconut as I didn't have the shavings. Worked out well, great for gifts .
