Ingredients

  • 1 lime, zest
  • 370 g white chocolate melts
  • 45 g organic extra virgin coconut oil
  • 6-7 whole glace clementines, or 170g glace orange slices, diced
  • 30 g Coconut chips, (available in asian stores)
  • 50 g organic puffed rice
  • 50 g craisins

Recipe's preparation

  1. Place zest and chocolate into mixing bowl and mill for 10 secs/speed 9.

  2. Add coconut oil and melt for 6 mins/37C/speed 1-2.

  3. Add remaining ingredients and mix for 20-30 secs/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting" with the aid of the spatula.

  4. Spread into lined 15cm baking tin and refrigerate. When completely set, turn out onto chopping board and cut into thin slices.

    This recipe is great!  Little Miss 4 made White Christmas at school and wanted to make it at home - of course I had to find a TM version!  She wanted it to be like the one she made at school so we used dried apricots and sultanas as well as the craisins and put it in mini patty cases rather than making a slice. 

    It was delicious!

    Love this recipe - don't know where to find the clementines so used blanched almonds instead!
