Ingredients
Pancakes:
- 150 g almonds
- 1 heaped tablespoon honey
- 1 teaspoon Gluten Free Baking Powder
- 4 tbsp brown rice
- 4 tbsp white rice
- 4 eggs
- 1 tsp vanilla extract
- 180 g Milk (Any)
- Coconut Oil Spray
- 20 g chia seeds
- 40 g Shredded coconut

- Add the Almonds and both rice to the Thermomix Bowl and Mill for 10 Seconds / Speed 9. Add the Baking Powder, shredded coconut and chia and mix together for 10 Seconds / Speed 7.
- Add the Eggs, Vanilla, honey and Milk and mix together for 20 Seconds / Speed 7 or until a thickish batter.
- Cook the Pancakes one at a time in the coconut oil over a LOW HEAT. They will burn easily so take your time. Well worth the wait in the end!
- Serve with your choice of accompaniment!

Delicious. I quartered the recipe as breakfast for one. Made a lovely 4 stack cooked them all at once in large frypan.
Served with maple syrup between each layer, then nakula berry coconut yougurt, banana and a sprinkle of cacao nibs.
Will definitely be my go to pancake/pikelet mix nutritious and gluten free 🤗

A great, easy recipe - thank you! It is a little grainy in texture but tasted delicious. I served it with coconut yoghurt, bananas, blueberries & raspberries.
