Recipe's preparation

    With ice cream churner
  1. Ensure all ingredients are refrigerated and cold prior to starting.

    Pour sweetened condensed milk and coconut cream into ice cream churner and turn on.

    Meanwhile, place chocolate (broken into pieces) into thermomix bowl and turbo 1-2 seconds until desired "chunkiness" MC on.

    Once ice cream (in churner) has thickened and is "soft serve" consistency pour in chocolate chunks, then turn off churner.

    Transfer to a freezer safe container and refrigerate until firm.

  3. Ensure all ingredients are refrigerated and cold prior to starting.

    Place chocolate (broken into pieces) into thermomix bowl and turbo 1-2 seconds until desired "chunkiness" MC on. Transfer to another container and set aside, in fridge.

    Without washing the thermomix, pour sweetened condensed milk and coconut cream into the bowl and combine 30 seconds speed 4 MC on.

    Pour into a loaf pan (or if you have an abundance of ice cube trays, fill them with the liquid instead)

    Freeze for 2-3 hours (should be set around the edges).

    Remove from freezer, place into thermomix bowl and blitz 30 seconds speed 9 MC on.

    Place back in the freezer for another 1-2 hours and repeat (this step is optional, but will give a better consistency).

    Stir through reserved chocolate pieces with spatula and place into a freezer safe container.

     

Tip

You can substitute other flavours instead of plain chocolate, just ensure they are gluten and dairy free, e.g. "Minton" biscuits, dried cherries, small chunks of mango/pineapple etc.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    This is a really great, easy recipe. I've tried it with both the shop bought coconut condensed milk and the Quirky Cooking recipe - both equally nice. Turns out nicely in my Breville ice-cream churner. Good to have homemade dairy free ice-cream!
