Ingredients

LCHF peanut butter cookies

Dough

  • 110 grams xylitol
  • 200 grams Peanut Butter, I used kraft smooth - 26.4g carbs in this serve
  • 1 --- egg

Optional

  • 50 grams dark chocolate, I used Lindt 70% - 17g carbs

Recipe's preparation

  1. Preheat oven to 160 degrees fan forced.

    Blitz xylitol for 5 seconds speed 10. Leave for a minute before you open the lid to avoid the powder escaping all over your kitchen

    Add peanut butter and egg, mix 10 seconds speed 4. Scrape down sides and mix a further 5 seconds speed 4.

    Roll into small balls (I use a 3cm ice cream scoop instead), flatten to around 1 cm thick with a fork creating a Crisscross pattern.

    Bake for 10-15 minutes, place onto baking tray to cool.

    Optional, place 50g dark chocolate broken into pieces into clean and dry bowl, blitz 5 seconds speed 9, then melt 1 minute, 50 degrees, speed 3, scrape down sides and cook a further 30 seconds, 50 degrees speed 3.

    Drizzle cooled cookies with melted dark chocolate.

Tip

I know peanuts aren't "truely" low carb, however I like these for an occasional treat!

Made with additional chocolate using the brands I have mentioned 2.9g carbs, 8.6g fat per cookie.

Without chocolate 7.2g fat, 1.8g carbs.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
