Place sugar in bowl and miss speed 9 for 5 seconds
Add egg yolks, vanilla extract, cream and salt and cook speed 3, 80deg, 7min 30sec.
Allow to cool and then mix in favouring of your choice.
Place into dishes (I use 2x pyrex dishes) ensuring not too deep so that it will freeze within 8 hours.
Then cut into cubes and blend 20 seconds speed 9 and then 10 seconds speed 4.

Made this with old gold dark chocolate (added at step 2) and I only had 300g thickened cream so added 200g whipping cream...OMG the BEST chocolate icecream ever!!! Thanks so much for sharing!!!
