Ingredients
Kez's Banoffe Pie BASE
- 140 grams Butter, cut into 2cm cubes
- 130 grams bakers flour
- 1 teaspoon baking powder
- 100 grams moist coconut flakes, McKenzies Brand if Possible
- 180 grams brown sugar
Kez's Banoffee Pie CARAMEL FILLING
- 40 grams golden syrup
- 395 grams condensed milk
- 70 grams Butter, cut into cubes
- 70 grams brown sugar
- 1 banana (large), sliced into round pieces
- 2 tablespoons Maple syrup, drizzled over banana's
Kez's Banoffee Pie TOPPING
- 600 grams whipping cream
- Piece of chocolate, to grate on top of cream
- 3 banana's (large), sliced into round pieces

BASE METHOD
Preheat Oven to 180ºC and grease a 24cm glass pie dish.
Place 140g butter into the TM bowl and melt for 2 minutes at 70ºC
on speed 3.
Add bakers flour, baking powder, coconut flakes, brown sugar and mix for 40 seconds on speed 5 with the aid of a spatula.
Spread into the pie dish and press down against the base and up around the sides.
Cook in oven for 10 minutes.
(Once cooled use the back of a soup spoon to smooth down any bubbles)
CARAMEL FILLING
Place golden syrup, condensed milk, butter and brown sugar into a clean TM bowl.
Cook for 5 minutes at 70ºC on speed 3 and then cook a further 5 minutes at
50ºC on speed 3.
Pour filling onto warm base and layer some banana slices on top.
Bake for a further 15 minutes.
Let cool completely.
TOPPING
Cover the top of the cooled caramel filling with sliced banana's and drizzle
with maple syrup. Insert butterfly into the TM bowl.
Add cream and whip for about 20 seconds to 1 minute on speed 4 until it
thickens. Watch carefully so it does not overwhip...
Then spread evenly over sliced banana's.
Decorate with the grated chocolate and a few slices of banana.
Chill in the fridge until ready to serve...Scrumptious!

This was amazing!! I made this for a dinner party and it got rave reviews, even people who don't like banoffee pie said it was the best thing ever. I prepped most of it in the morning and added the fresh bananas and whipped cream a couple of hours before serving.
Like others have said, there are a few steps involved, but none of them are hard or too time consuming.
Bit of effort but so worth it! Delicious! Everyone loved it

Hi - am just making it now, but my new TM does not have 40 degrees, only 37 or 50. Have plumped for the 50, so hope it works!!
I know it is sweet but yummy..If you liked this try my new Kez's Mini Banoffee Pies, Much quicker and easier to make as I cheat with some butternut snap biscuits for the bases.. They are a big mouthful of yumminess.. Enjoy

I am sorry if my recipe wasnt clear and you found it difficult to interpret. The Base is mixed in the TM, spread onto a baking dish and baked in the oven for 10 mins, when it has cooled, press it down into base with the back of a soup spoon as the baking powder tends to make it want to rise.. After making the caramel sauce mix in the TM where it is cooked twice for 5 mins at different temps, you pour this mix into the base, place a thin layer of banana's on top and cook for a futher 15mins in oven. Once this has cooled completely, liberally layer more sliced banana's over the caramel and pipe the whipped cream topping on top then grate some chocolate over that.. try refridgerating for an hour or so if you find yours is a bit gooey and it should slice up well, however I am just putting my quick and easy version of this on the Recipe Communtiy site today. Given only cooking toimes and no instructions on what to look for after baking, bith crust and filling were a disaster. The crust did not cook in time allowed and as I didn't know what the filling was supposed to look like at the end of 15 minutes, ended up a big sticky mess.
Tasted great though - very sweet!
